POTATO CAKES

Makes 8 – 10 cakes, for six people as a side dish and goes well with the
chicken and fish dishes, or as a main course for four people, served with a
green salad.

Ingredients:
6 medium potatoes, grated
1 medium onion, finely chopped
1 tsp salt
1 tsp ground black pepper
5 tsp vegetable oil
1 tbsp of fresh coriander finely chopped

Method:
Peel the potatoes and boil them in a saucepan of water for
10 - 15 minutes until soft. Drain.
Transfer the boiled potatoes to a bowl and mash them roughly.
Add the chopped onion, salt, black ground pepper and the coriander.
Take a spoonful of the mixture in your hand and roll it into a small ball.
Repeat until all the mixture is finished.
Flatten each ball and fry for 5 minutes approximately until they
become golden.

Note: this is a good variation on a basic potato dish and travels well for
snacks and packed lunches.
